People in Friuli-Venezia Giulia brag that their sole is the world’s best because of the particular microclimate of the northern Adriatic. It is indeed delicious, but I have had outstanding sole in England, France, and elsewhere. This particular preparation is interesting because it really brings out the flavor of the fish. I first had it on a small fishing craft near Muggia made with a fish caught minutes before. The key to making this recipe at home is to use a shallow covered heatproof di
