This is a recipe from Grazia Princic, wife of Sandro, who produces marvelous wines. Grazia is one of the top home cooks in the region, and her specialty is seafood. I learned a trick from her that I want to pass on to you. She takes a Moulinex-type hand grater for cheese and puts a peeled garlic clove and a few leaves of parsley inside.
