If you do not have white asparagus for the previous recipe, use thick green stalks and make a honey-egg sauce. The honey goes very well with the more assertive green asparagus, but would overwhelm the white ones.

Method

First, make the sauce. Combine the honey, vinegar, and oil in a large bowl and blend with a whisk until silken and uniform. Mash the egg in a separate bowl into tiny pieces. Add the parsley, salt, and pepper to the egg and combine thoroughly. Add the egg mixture to the honey mixture and carefully whisk until you have a creamy sauce. Cover with plastic wrap and set aside.

Peel the bottom
