Although the name would suggest that this is a meat dish, in fact it is essentially vegetarian with a hint of pork flavor from the bacon fat. To make the dish truly vegetarian, use unsalted butter instead.


  • 5 large, thick green bell peppers
  • 4 tomatoes
  • 4 tablespoons/60


Core the green peppers and cut into rings. Dip the tomatoes briefly in boiling water; peel and slice them.

In a large skillet, heat the bacon drippings over medium heat. Add the onion and sauté until translucent. Add the paprika, green peppers, tomatoes, and salt to taste. Simmer covered until the peppers are tender.
