This is my adaptation of a dish I have tasted a couple of times at the Ristorante Roma in Tolmezzo. The interest in this preparation is in the interplay of sweet with sour and hitter. Note that these latter two sensations are not the same, as most people think. Sour might he a pleasant taste in citrus fruit or cherries or cream, while bitter is a sensation in a complex range of experiences we have in tasting chocolate, coffee, onions, and other foods we love.
