There are many uses for turnips in Carnia, the most famous being brovada (pickled turnips). They are also used as a vegetable on their own, especially with roasted meats and game birds. Cumin is an optional spice that works very well. Here is a useful recipe.

Ingredients

  • pounds/1 kg small, firm turnips, with leaves removed

Method

Boil the turnips, partially covered, in lots of salted water until they are cooked. You should be able to stab them with a fork, but they should not split. Drain the turnips, peel, and cut into bite-size pieces.
