Angel food cake is made in a special tube pan which is not greased so that the light, airy batter clings to the sides as it rises.

Ingredients

  • 1 cup/110 g cake flour
  • 1 ½ cups/300 g

Method

  1. Heat the oven to 350°F/175°C. Sift the flour. Add about one-third of the sugar and sift the mixture twice again.
  2. Whip the egg whites until foaming. Add the cream of tartar and salt and continue beating until the egg whites are stiff. Whip the remaining sugar into the egg white a tab
