Angel food cake is made in a special tube pan which is not greased so that the light, airy batter clings to the sides as it rises.


  • 1 cup/110 g cake flour
  • 1 ½ cups/300 g


  1. Heat the oven to 350°F/175°C. Sift the flour. Add about one-third of the sugar and sift the mixture twice again.
