Madeleines are baked in a hot oven so that they form a characteristic peak on top with a shell-shaped underside.

1 cup 125 g 1 tsp
Method
- Sift the flour with the baking powder. Whisk the eggs and sugar to the ribbon. Beat in the orange flower water or grated zest. Fold in the flour in three batches, adding the butter with the last batch. Chill for 20-30 minutes until the butter hardens slightly and the dough stiffens.
