Any berries may be used to make this juicy cold pudding.

Ingredients

  • 1 ½ lb/750 g mixed berries
  • 6 tbsp/75

Method

  1. Pick over the berries and rinse with water. Combine the wet fruit and the sugar in a saucepan and simmer, stirring, until the fruit softens and releases juice, 5-10 minutes depending on the berry. Let the fruit cool and add sugar to taste.
  2. Line the bowl with the bread slices, trimming so that they fit tightly. Reserve several to cover the pudding. Add the fruit
