This is a family recipe that my mum taught me to make, and one that I still use all the time. Also called griddle pancakes, girdle cakes or dropped scones, they are easy to make and make a lovely breakfast dish, especially when buttered and served with jam or honey. They are also wonderful when served as a teatime treat, and of course, who wouldn’t want to see a couple of these in the school or office lunchbox?
