A classic French tapenade usually has salted anchovies in it, and although I am a big fan of these little silver fishes, I realise that many aren’t, so this is a recipe with all the elements of a classic tapenade, but sans anchovies. This makes a great dip to have to hand for impromptu lunches and when served with crackers for pre-dinner nibbles, and it lasts for a week or two in the fridge once made.
