This is one of my family’s favourite recipes, and I’m constantly asked to make it at home. The recipe was given to me by a Moroccan friend and neighbour, when I lived in France. It’s one of those recipes that works well all year around - served with flat breads or pitta breads and assorted salads in spring and summer or served with hot, fluffy and fruity couscous, assorted chutneys or pickles in the depths of winter.
