This cool and refreshing salad is served with kebabs, grilled meats, grilled cheese as well as being a salad to eat by itself for a light lunch with some local “village” bread. We used to make it by the bucketful in the restaurant in Cyprus and it makes a fabulous filling for a pitta bread sandwich. If you are making the salad ahead of time, then don’t add the dressing until just before you serve it.
