An authentic recipe from the Provence in the South of France for a baked summer vegetable dish in an earthenware dish of the same name. Use any summer vegetables you have to hand, such as courgettes, onions, tomatoes, aubergines and peppers. As with lots of Mediterranean style recipes, you serve a tian at room temperature and not when it’s hot.
