This spicy, rich and sticky tart hails from Cumbria in the north west of England. The tart is made with dates, apricots, ginger and the rather surprising ingredient of rum. With so many exotic ingredients in the tart it’s believed that the recipe originated near the Cumbrian ports of Whitehaven, Maryport and Workington and that some of the imported Caribbean ingredients made their way from the port into the local kitchens there.
