Ingredients: 75 g mixed peel; 2 large free-range eggs; 100 g suet or melted butter; Demerara sugar, to sprinkle; 500 g dried mixed fruit; 1 teaspoon mixed spice; 600 ml milk; 10 to 12 slices of stale white bread, about 450g to 500g; 150 g soft brown sugar; 2 tablespoons orange marmalade

I’ve indicated that this recipe is global even though I think of a bread pudding as being a very British recipe. The fact of the matter is that I’ve enjoyed delicious bread puddings in the States, Canada, Australia and New Zealand as well as at home in the UK.
