Raspberry jam is the queen of red fruit jams in my opinion. Its rich, ruby red colour almost glows in the jar as well as on the spoon. It’s that cheery “wake me up” kind of breakfast preserve as well as being the perfect filling for a Victoria Sandwich. It’s also a favourite for a cream tea; although strawberry jam is the usual suspect in a Devon or Cornish cream tea I always favour raspberry jam with my scones and a dollop of clotted cream.
