I learnt to make these when I did my apprenticeship at the Saxon Hotel in Joburg a few years ago and I just fell in love with the colour and texture. Similar to potato crisps, but healthier.

Ingredients

  • 4 medium beetroots plus other root vegetables (carrots, parsnips, sweet potatoes), if desired
  • 1 butternut

Method

Preheat oven to 200°C. Slice beetroot (and other root veg, if using) as well as butternut into very thin slices. Place in a large bowl and toss with olive oil.
