  • 1 kg tripe pieces (intestines, liver, blanket and honeycomb tripe)
  • Salt and pepper

Method

For the tripe

Rinse tripe under cold, running water (make sure it is thoroughly cleaned). On a medium to high heat, bring tripe and water to a boil (enough water to cover the meat). Cook for 3 hours, adding more water if necessary. Season with salt and pepper, and reduce to a low heat until a thick sauce forms.
