In a large saucepan, fry lamb shanks until browned. Remove from heat. In the same saucepan, fry onion, garlic and ginger until soft. Add the lamb shanks and remaining ingredients, except the lentils. Cover with a lid and cook for 2 hours.
Add the lentils and cook for a further 30 minutes, until cooked through. Season with salt and pepper. Serve with rice or mashed potato.
