Place couscous in a bowl and pour over just enough boiling water to cover it. Cover with a plate or lid and leave to stand for 5 – 10 minutes to absorb the liquid.
Drain off any excess water and fluff with a fork to separate the granules. Season with salt and pepper. Sprinkle a little olive oil over couscous.
Add baby spinach, peach slices and feta cheese. Toss before serving.</
