Peel and cut plantain into coin shapes, about 2½ thick. Place in salted water and leave for about 5 minutes. Drain and pat dry.
Heat oil in a frying pan on medium-low heat and fry plantain slices for 3 – 4 minutes on each side until they turn orange. Place slices on a plate lined with paper towels to absorb extra oil. Before serving, sprinkle fine sea salt and cinnamon to taste over coo
