Use this dressing for green salads or delicate herb and lettuce leaves.


  • 200 ml extra-virgin olive oil
  • 2 cloves garlic, peeled
  • tarragon stalks (if using lea


Make the dressing at least a day before you plan to use it.

Put the olive oil, garlic, tarragon, lemon juice and white wine vinegar into a bowl, season to taste and mix well.

Cover and leave at room temperature.

Leave the bits in to infuse further or strain them out.
