Try to buy Cabernet Sauvignon vinegar; this is a rather special Spanish red wine vinegar, the best I have yet come across.
Alternatively use a good quality red wine vinegar. This dressing is ideal with robust salad leaves or with grilled meats and fish.
Simmer the shallots, red wine vinegar and water together until reduced by half.
Whisk in the olive oil and season with salt and pepper.
