Roseval potatoes can be found during late summer. They have a pink skin and waxy flesh, which make them perfect for warm potato salads. As an alternative use Charlotte, Ratte or Pink Fir Apple. You may find Alsace bacon in a smart delicatessen (It has a luxurious smokey aroma and flavour), but otherwise use a good-quality smoked or cured streaky bacon, such as pancetta thinly sliced.
