A simple summer starter or light main course that Delia Smith included in her Winter Collection. Italian onions, or cipolline, are rather like squashed button onions, but if you can’t find them use shallots.

Ingredients

  • 80 ml extra-virgin olive oil
  • 500 g flat Italian onions or shallots, peeled

Method

Pre-heat the oven to 175°C/gas mark 4.

Heat a roasting tin in the oven for 10 minutes or so, then add 30 ml of the olive oil and the onions.
