Squash and pumpkins vary in shape and size, and butternut is probably one of the easiest to prepare.

It also has the most consistent flavour. New types of squash appear all the time on supermarket shelves and normally carry cooking instructions on them.

Serve with grilled fish, poultry or with a selection of other starters.
