Whisk together the flour, egg and sugar (if using) with a third of the milk until smooth.
Then whisk in the remaining milk and strain if necessary.
Heat a non-stick frying-pan or a favourite alternative pan, rub it with a little vegetable oil then pour in some pancake mix.
Tilt the pan immediately so that the mixture spreads evenly.
Turn after a minute with a spa
