Meyer lemons grow in California gardens from L.A. to San Francisco. They are sweeter, more flavorful, and more perfumey than the usual store-bought variety. Buy them when you see them. For lemon lovers, this marmalade will rival any orange marmalade from Seville.
Wash and scrub the lemons. Place them in a large pot and cover with cold water. Bring to a boil, reduce the heat, and simmer for 30 minutes or until the flesh can be easily pierced with a knife. Drain and set aside to cool.
