C’mon, bold adventurer! Depending on who you hang with, this dish will either make or lose you a lot of friends. One thing’s for sure: They’ll never forget you. Even at Les Halles, we seldom get away with serving this dish. But once a year, we invite our fellow brasserie, bistro, and French-restaurant workers, some regular customers, hard-core Francophiles, and lonely French expats to a midnight party where we ply them with cheap Beaujolais and serve them from a big old pot of tripe. Almost
