  • 4 garlic cloves, germ removed (that’s the tough little green bit in the center of the clove)
  • large-grain sea salt (gros sel)
  • 1 cup/


Place the garlic cloves in the food processor. Add the salt and half the olive oil. Process for a few seconds, then add the yolk and mix well. With the machine running, slowly drizzle in the rest of the olive oil and process until smooth. Keep refrigerated until needed (no more than 2 days).
