Method

In a large frying pan, preferably nonstick, heat 1 tablespoon of the oil over medium heat. One at a time, crack 4 of the eggs into the pan. Sprinkle the eggs with salt and pepper, cover, reduce the heat to medium-low, and cook until the whites are opaque and the yolks thicken, 2–3 minutes for sunny-
