Watermelon and Shaved Celery with Feta

I first encountered the inspired pairing of cool watermelon and feta cheese while working on a book with a talented Greek chef. Ever since, this dish has been a favorite addition to my table.

Ingredients

  • 6 celery stalks
  • 1 small seedless watermelon, about lb (1.7

Method

If the celery stalks are fibrous, use a vegetable peeler to remove the stringy outer layer. Using the peeler, shave the stalks into long, thin strips. If the stalks become too thin to shave, slice them as thinly as possible with a chef’s knife.

Cut the watermelon in half through the stem end. Cut each half in half again to make quarters. Cut the flesh from the rind of each quarter, care
