I first encountered the inspired pairing of cool watermelon and feta cheese while working on a book with a talented Greek chef. Ever since, this dish has been a favorite addition to my table.
If the celery stalks are fibrous, use a vegetable peeler to remove the stringy outer layer. Using the peeler, shave the stalks into long, thin strips. If the stalks become too thin to shave, slice them as thinly as possible with a chef’s knife.
