Method

  • Place cooled espresso and coffee liqueur in a shallow dish and mix to combine. Set aside.
  • In a large bowl, beat egg yolks with an electric mixer on medium speed until slightly foamy. Add the sugar and beat until light in color and thickened, about 2 to 3 minutes.
  • Add the softened mascarpone cheese, salt, and rum and beat until well combined and creamy.
