Thai iced tea is one of the most addictive beverages known to man, especially on a smoldering, hot day. Thai tea was originally a brewed Ceylon tea, but was changed to a locally grown landrace version of Assam tea due to cost. Known as bai miang, this brewed tea is poured over ice and sweetened with condensed milk. It was my inspiration for this layer cake.
