Method

  1. In a medium-sized saucepan, boil the milk and half the sugar.
  2. In a medium-sized bowl, whisk the egg yolks and the remaining sugar. Temper the egg yolks by adding the hot milk mixture in three increments while constanly whisking. This technique will allow you to combine 2 mixtures at different temperatures, to prevent curdling.
