Method
- In a medium-sized bowl, whisk the sugar and eggs. Place the bowl over a pot of boiling water and whisk until the mixture reaches 59C (138F).
- Transfer the mixture into a bowl of a stand mixer and whip it for 10 minutes until the mixture is tripled in volume.
- In a small-sized saucepan, heat the rum just enough to dissolve the bloomed ge
