Simple Syrup 300


  1. In a blender, pulse the simple syrup and shiso a few times. It should be clear with little flecks of green.
  2. In a small-sized saucepan, boil the shiso syrup. Remove from the heat and stir in the gelatin until it is dissolved.
  3. Set the gelee aside to cool in a medium-sized bowl. When cool, refrigerate until it is set. (You want the gelee
