Every cook needs a legendary apple dessert in their pastry arsenal. Not having one means you’re fucking up somewhere in life. Aki means “apple” in Japanese, and Japanese apples are known to be some of the finest in the world. But for this dish, I stuck with tart Granny Smith apples because I wanted a spin on American apple pie with a refined Japanese twist. Rich butterscotch sauce is always a win, but the secret weapon here is adding a touch of white miso. It’s simply an incredible p
