  1. Cut apples in a small dice. In a medium-sized saucepan, cook the sugar and water to amber-dark caramel, add the butter and whisk until emulsified.
  2. Cook apples until al dente and strain with a fine sieve into a medium-sized bowl. Set aside to cool.
