Mille feuille is a classic French pastry that usually has three layers of puff pastry sandwiching two layers of pastry cream. When I think of mille feuille, I think of the great Pierre Hermé. During my first trip to Paris in 2000, I had a chance to experience his pastry and his feuilles rocked my world. It was the greatest pastry I’d ever eaten and inspired many variations of my own over the years. For this recipe, I wanted to create a unique identity with multiple textures that do not invo
