When it comes to alcohol in pastry, we think of whiskey, wine, rum and others long before we ever get to sake. This dish is an ode to the subtlety of this amazing Japanese rice wine. I began with Valrhona white chocolate paired with Junmai Sake to create a silky-smooth cream, a gorgeous marriage that amplifies both the white chocolate and the full bodied, floral notes of the sake. Yuzu-scented berries bring a sweetly acidic touch, but the key here is that beautiful salty
