So much of what I do is influenced by Japanese techniques and culture. Yaki painappuru simply means “grilled pineapple” in Japanese, and I created this dish while working at a modern Asian restaurant with Japanese roots located at Ku De Ta Bangkok. Two chefs were grilling meat and fish over Japanese binchotan charcoal, and I started experimenting by throwing fruits on the grill. Pineapple was the clear winner. The intense heat combined with zero charcoal scent meant that the n
