Kamameshi translates to “kettle rice,” a beloved traditional slow-cooked dish prepared in an iron pot known as a kama. I have taken this rice ideology and placed the dish in a yamaga pot instead, but let’s just cut to the chase: I am making American rice pudding with Japanese sushi rice served in a Japanese utensil.
