  1. In a small-sized saucepan, boil the purees and simple syrup. Add the bloomed gelatin and stir until it is dissolved. Strain through a fine sieve into a medium-sized bowl.
  2. Place the bowl over an ice bath to reduce the temperature of the mixture while constantly stirring.
  3. Pour into a flexipan pomponette mold and freeze.
  4. When f
