  1. In a small-sized saucepan, slowly bring the mango puree, simple syrup and agar powder to a boil.
  2. After the mixture has boiled for a minute, whisk in the bloomed gelatin until it dissolves.
  3. Pour the liquid slowly directly on the coconut ribbon and make sure it’s one even layer.
