Method

  1. In a medium-sized saucepan, warm the puree, lemon juice and simple syrup.
  2. When the liquids are warm, pour them into a medium-sized bowl. With an immersion blender, blend in the xanthan gum.
  3. Chill down over an ice bath and place in a sauce bottle.
