  1. In a medium-sized saucepan, cook sugar and water. The water will evaporate and the sugar will caramelize. Let the color of the caramel turn from light amber to medium amber. Take off the heat, whisk in the butter, cream and yuzu juice until incorporated well.
  2. Add the nuts to the caramel mixture. You will add this by eye. There is no set amount.
