This makes for an original and delicious breakfast or brunch dish. It is particularly good if you have the ricotta pre-whipped and the orange segments and thyme at the ready, so you can pile everything on the teacake while it’s still hot.

Ingredients

  • 200 g/7 oz/scant 1 cup ricotta

Method

  1. In a bowl, beat the ricotta, vanilla, sugar and the zest of half of one of the oranges together until smooth.
  2. Segment the oranges (see hack) and drain the segments on kitchen paper.
  3. Toast the tea-cake halves to your liking.
  4. Divide the flavoured ricotta between each half tea cake, spread it out thickly,
