This is the simplest of dips and, of course, if you don’t care for the mustardy bite of wasabi, then a little chopped chilli will do very nicely instead. If you’re making ahead of time, closely cover the dip with a piece of cling film (just touching the top of the dip to exclude all air) and keep it in the fridge until needed.

  • 2 ripe avocados, stoned and peeled (see hacks)
  • 1 tbsp lime juice
  • 1

Method

  1. In a medium bowl, mash the avocados with a potato masher until smooth.
  2. Stir in the lime juice, wasabi paste, and coriander (cilantro) and season with salt and black pepper.
  3. Serve the dip with tortilla chips or raw vegetables.
